Chocolate Chip Cookie Dough Cupcakes

One of my favorite blogs to read is The Larson Lingo.  Melissa just has the most darling little girls, the funniest stories, and the best recipes.  I've been collecting recipes on index cards and keeping them (in alphabetical order, because I'm OCD) in a photo album.  It's perfect!


Chocolate Chip Cookie Dough Cupcakes is a recipe I've been dying to try.  They look deliciously unhealthy.  And that's my favorite kind of dessert.  With my 2011 goals, I've vowed to try to eat better.  Of course this doesn't fall under eating better, but it counts towards my two new recipes per month.

Here's what you need:


  • Chocolate cake mix--any brand, mine was BOGO (with the ingredients on the back of the box, usually water, oil, and 3 eggs)
  • Ready-to-bake chocolate chip cookies--any brand, I just bought the cheap store brand, but I would of course prefer Nestle Tollhouse
  • Frosting--I chose vanilla because I love chocolate cupcakes with vanilla frosting more than anything
  • Cupcake/muffin liners


Preheat your over to 350 degrees.  Fill each liner half-full with cake batter and add one cookie dough chunk.  Bake for 15 minutes.  Cool completely before frosting.


As I tried to explain to Brett, anyone can bake out of a box.  It was fairly easy with the cake mix, the ready-to-bake cookie dough and out-of-the-can frosting.  Maybe I'll try it with everything made from scratch, but for now, it was very easy.

At first, I was spooning the batter into the cups, but it was taking too long.  I've never tried this before, but I figured using an ice cream scoop with be quick and efficient.  Filling it about 3/4 full was enough batter for each cupcake.  This is definitely something I'll do every time!

Some of the centers caved in once they cooled because I think I took them out maybe 2-3 minutes early.  Rookie mistake, it shouldn't have happened.  But they were a hit!  I thought they were delicious but so sweet and so rich!  I could only have one and that is a big thing for me to just eat one cupcake.


Melissa, is the cookie in the middle supposed to be raw, semi-cooked, or completely cooked?  Mine came out completely raw.  Her pictures with the bite missing are definitely prettier than mine.

  1. So glad you made them! The cookie dough is supposed to be cooked, so keep them in the oven a few more minutes! :)
