Skinny No Bake Peanut Butter Pie


I've made this pie three times now, first for my nephew's sixteenth birthday dinner, then for my sister's friend after giving birth to her second baby, and most recently for the Game of Thrones finale.

It's easy, fast, and lite.  The perfect summer dessert!  I'm not a big fan of peanut butter, but I love this!  Also, I only remembered to put in the confectioner's sugar the first time.  I tried to make it from memory the second time and simply didn't have any the second time.  Whoops.  It didn't make as much, but it was just as good.  (And probably fewer calories.)

Skinny Peanut Butter Pie:
  • 5 oz reduced fat cream cheese, softened
  • 1/2 cups confectioners' sugar
  • 1/3 cup peanut butter
  • 8 oz fat free frozen whipped topping, thawed
  • reduced fat graham cracker pie crusts
  • 3 tbsp Hershey's chocolate syrup

Beat cream cheese and confectioners' sugar together in a medium bowl. Mix in peanut butter and beat until smooth. Fold in whipped topping. Spoon into graham cracker pie shell, cover, and refrigerate until firm, at least 2-3 hours. Drizzle with chocolate syrup before serving.

Still trying to eat healthy, so I have a salad--sometimes with steak or salmon--for lunch at least four times a week.  It's true what they say, I crave a salad at home now more than fast food.

On my way down Main Street, I was forced to MERGE LEFT because a production company had set up outside our local theater (where I used to be in plays, once upon a time).  They're filming Leonardo DiCaprio's "Dear Eleanor" starring Jessica Alba and Luke Wilson, set for a 2014 release.

At the end of May, I started my very first class toward my Paralegal Degree.  Right now I'm taking Intro to Law online, but I'll be taking more classes online and in the classroom come fall and hopefully be done with my degree fall 2015.

One of my favorite things about my job is dressing up, but when it's hot outside, sometimes there's nothing better than throwing on shorts and a tank top as soon as you get home.  My outfit of the day: blouse from Forever 21, skirt from Target.  (Both old.)

Yikes!  I was hands down the hottest day of the year so far.  And when it's this hot on June 10th, that doesn't look good for the rest of the summer.  I tried to sit outside, but I didn't last too long, even in the shade.

I never get pedicures, but my feed have been killing me lately ever since I walked a few miles in sandals on Saturday when Christian and I went to the Rockies game.  I wanted to get one today, but every where was closed or not accepting walk-ins today.  I settled for hot water and Epsom salt for the second day in a row.
Okay, remember how I said I've been trying to eat better?  I had pizza for dinner.  Every Monday, food trucks gather just a few blocks from my house and I just can't resist.  I think it's so awesome they have a wood fire to cook pizza on their truck, but it wasn't my favorite pizza.

There's live music, tons of people, and you're allowed to bring your own alcohol.  Even though it was so hot out today, it got to be pretty comfortable around 7:30, and Rachel, Travis, and I enjoyed sitting outside and soaking up summer.

Around 8:00, the food trucks start packing up and leaving.  They have everything from gourmet grilled cheese (the truck on the left) to Mexican (the truck on the right) to barbecue and anything in between.  They also have at least three ice cream or dessert trucks.  Yummy!

Ending the day with some leisurely reading.  I've been completely hooked on Game of Thrones ever since I decided to watch the series this spring while Christian was counting down to the season 3 premiere.  Now I'm over halfway through the second book and I may or may not be rewatching the series now that season 3 is over.

Colorado Camping

Over the weekend, Christian and I went camping.  It's the first time I've been camping, maybe since 2007, but it was so much fun!
 
We left on Friday morning and drove toward Carbondale, Colorado.  We ended up camping at Avalanche Campground on Friday night.  It was gorgeous and it was such a nice day.  Even in the mountains, it was warm and sunny.
 

We went on a hike for about two hours, but the only trail near our campsite was a 10 mile hike to a lake, so we didn't go all the way, but there were still beautiful sights to be seen.  Christian's dogs, Sasha and Zoey, loved being off the leash and running along the trail.  Sasha especially loved lying in the muddier parts of the trail.
 
 
When we got back to the campsite, we started making dinner--macaroni and cheese.  It wasn't too shabby for campfire food.  We also had peanut butter cup s'mores for dessert.
 
 
Because another couple showed up with a dog just before dark, we decided to move to another campsite in the morning.  There wasn't anything else to do at our campsite and Sasha wouldn't stop barking.  We went on the most scenic drive, though.  That area of Colorado is so pretty.
 
 
By lunch time, we had made it to the Black Canyon of the Gunnison.  My mom said I had been there before, but I don't remember it.  What a sight to see!  It was a little scary standing at the look out points because it was just a straight drop to the bottom.  We boiled some water for soup and ate lunch looking out over the canyon.
 
 
 
 
 
 
We kept driving along the Gunnison River, looking for another place to camp.  Since we were so far from home, Christian wanted to get a little closer so we wouldn't have a long drive on Sunday.  When we went over Monarch Pass, we saw snow and white out conditions, but when we got to the bottom, it was mostly sunny again.
 
 
 
We ended up setting up camp along the Trout Creek near Salida at a place called Mushroom Gulch.  It was a lot different terrain than the night before, but it was still a nice spot and a lot more secluded.  Sasha and Zoey had a blast running all over the place and discovering the area around us.
 
 
Unfortunately since we got there so late (about 5:30), we didn't do much other than set up camp and make hot dogs for dinner.  It was a lot cooler day on Saturday than it was on Friday, but it still wasn't too bad and it was comfortable at night in a down sleeping bag.
 
 
In the morning, we made oatmeal for breakfast again and then packed up camp to head home.  We went the back way out of our campsite through a really cool area and then drove through Fairplay.  On the way home, we were going to stop in Conifer to play disc golf and have lunch, but we decided to go home instead because it was windy and drizzling in the mountains still.  After we got lunch, we took the dogs to the dog wash to clean them up and boy were they dirty!

 
 
It was a lot of fun and I definitely want to go again.  We spent a lot of time in the car on Saturday, but we went by so many spots that would be great for our next camping trip.

{7:00} Being woken up by this sweet face every morning isn't so terrible.

{8:00} Strawberries, bananas, blueberries, peaches, kiwi, and spinach smoothie. Yum.

{9:00} They said it would snow 12 inches.  Really, it was just a light dusting.

{10:00} Even though it's April 10th, it's 18 degrees outside and that calls for a space heater.

{12:00} Eating lunch like a vegetarian today (with salad and sweet potatoes, too).

After I finished, I noticed how many food related pictures I have.  Certainly more than usual.  I'm definitely trying to be more intentional about what I eat, so it's a huge focus for me right now.
